We love Shrimp Scampi at our house. It’s a favorite to order when we eat out too. I rarely cook shrimp recipes because shrimp is expensive and it’s not fresh where we live. There was a sale at our local grocery store, so I decided to make Shrimp Scampi with my garden’s fresh zucchini. I’m sharing my Easy Skinny Girl Shrimp Scampi with Zoodles recipe with you today!
What are Zoodles?
I will be honest with you, the only SKINNY part of Easy Skinny Girl Shrimp Scampi with Zoodles is the zoodles. I hope you know what zoodles are. If not, I will explain. Zoodles are made from zucchini. I grow zucchini in my garden every summer and enjoy making Zoodles. You can cut the Zoodles (zucchini noodles) with a knife or make it easier and buy a cool zoodle cutter, like the one I have. For me, this the best way to make Shrimp Scampi Zoodles.
What Can I eat with Shrimp Scampi with Zoodles?
You could add a tasty salad with this low-carb recipe. Or add some crusty French bread if you’re not concerned with carbs on your diet. I kind of go back and forth on the carbs. I love my carbs so much! But, I have found some really great alternatives to bring my carbs down and this Skinny Shrimp Scampi just hits the spot with delicious zucchini noodles!
I’m going to tell you my least favorite thing about this recipe. Grating the Parmesan cheese. That is hard work! Parmesan cheese is perfect in the recipe, but oh so hard to grate! I received 2 large blocks for free, so I’ve got to use it up. It is taking a LONG time. LOL!
Ingredients
- 4 Tbl Butter
- 2 Tbl Olive Oil
- 1/2 Medium Onion, Finely chopped
- 4 Cloves Garlic Cloves, Minced
- 1 Lb Large Shrimp, Peeled And Deveined, Tails removed
- 1/2 cup White Wine or Chicken/Vegetable Stock
- 2 Lemons
- Hot sauce to taste (I used Tobasco about 6 splashes)
- Salt and Pepper, To Taste
- 2 Medium Zucchini
- 1/2 tsp Italian seasoning
- 1/2 cup Grated Parmesan Cheese
Instructions
- Make your zucchini noodles, set aside.
- Grate Parmesan cheese and set aside.
- Add oil and butter to skillet and heat on medium until butter is melted. Add the onions and garlic and cook 3 minutes, stirring occasionally. Add shrimp and cook for 3 minutes or until shrimp are pink. Add lemon juice, wine, Italian seasoning, salt, pepper and hot sauce. Turn down heat to simmer. Add zoodles and cook for 2-4 minutes. They don’t need to cook long! You don’t want to get them too soft and mushy. Remove from heat and add the parmesan cheese. Serve immediately. Top with additional cheese if desired.
