Super Easy Stuffing With Yellow Squash

Every Summer I have an abundance of yellow squash in my garden.  I have several standard recipes I usually stick with because my family enjoys them.  I was in the mood for something new and was hoping my family would like the new recipe.  Luckily, they did!

This Stuffing with Yellow Squash recipe is actually very simple.  I’ve seen and tried many squash casserole recipes, but honestly, I don’t really like most of them.  One that was was good had stuffing in it plus cream of chicken and a few other ingredients.  I’m just not a fan of the soggy part of most squash casseroles.  I wanted something that was not soggy!  I came up with this very simple recipe and I hope you try it.

Super Easy Stuffing With Yellow Squash

Slice the squash and cook it over medium heat in a skillet.  I like mine browned, but you can just cook until soft.  While your squash is cooking, make the stuffing according to package directions

Mix the squash and the prepared stuffing and your Super Easy Stuffing with Yellow Squash is complete.  Stuffing with squash makes an amazing side dish!  I could seriously eat this as my main dish, it was so yummy!  I loved how simple it was to come together.  Quick meals are perfect for our busy lives.  After a long day at work, sometimes I need something simple, but at the same time enjoyable for me and my entire family.

We had pork chops and a side salad with our stuffing with squash.  The meal was so delicious and so simple.  These are my favorite kind of meals on busy days.

Super Easy Stuffing With Yellow Squash

Ingredients

  • 2 small to medium yellow squash
  • 1 box of stuffing mix
  • 2 tblsps butter

Instructions

  • Make stuffing mix according to package directions.
  • Slice squash thinly and into bite sized pieces. Melt butter in skillet over medium heat. Saute squash in butter, turning occasionaly, until tender or desired consistency. I like to cook mine until it slightly browns, which takes about 10 minutes to cook.
  • Combine Stuffing and squash and serve warm.
  • Additional Tips: You may also saute onions, celery, and/or green pepers with ths squash for added flavor.
  • Place your squash and stuffing mixture in an oven safe pan sprayed with cooking spray and bake at 350 for 15 minutes. This will make the stuffing crispy.

Conclusion
