Ingredients
  

  • Vegetable Omelette
  • 2 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped spinach
  • 1/4 cup diced onions
  • Salt and pepper to taste

Instructions
 

  • Whisk the eggs in a bowl and season with salt and pepper.
  • Heat a non-stick pan over medium heat and pour in the whisked eggs.
  • Add the vegetables evenly over the eggs.
  • Once the edges start to set, fold the omelette in half and cook until the eggs are fully set.
