Sheet pan recipes are my favorite to make! I love how easy they are and they leave little mess to clean up. Today I’m sharing with you my family’s favorite Easy Sheet Pan Garden Vegetables with Smoked Sausage recipe.
Even though Summers can get extremely hot in Oklahoma, I always look forward to the season. The number one reason is my GARDEN. It makes me happy to plant my seeds, growing them into beautiful leafy plants with vegetables and fruit, and preparing them in delicious recipes.
It seems that squash is the easiest vegetable for me to grow, so I am always trying to create new recipes that implement it.
When it comes to this recipe, I can be really versatile. Putting in it whatever is available in my garden or refrigerator. You can also be flexible with this recipe in the same way.

Ingredients for Easy Sheet Pan Garden Vegetables with Smoked Sausage
I used 2 small Potatoes, 1 medium Zucchini, 1 medium Yellow squash, 1 Onion, 6 cloves of garlic, Minced dill, minced basil, Garlic Salt, Pepper, and Olive Oil.
Preheat oven 375 F (my oven runs warm, so you may be fine cooking at 400 F). I cut all vegetables and smoked sausage into bite-sized pieces, not counting the garlic or okra. Peel the garlic, and trim the okra on the top end. Mince the fresh herbs.
Place all vegetables in a bowl and pour the olive oil in, mix to cover all vegetables.
Add in herbs and seasoning and mix again to cover vegetables.
Place vegetables on a cookie sheet covered with Parchment paper. Bake in the oven for 30 minutes rotate vegetables halfway through cooking.
I usually make two pans of this. By the time I cut up everything, I have a LOT of food. For everything to cook evenly, don’t overlap the vegetable. Place them close together, without overlap. This will help your vegetables to cook evenly and quickly.

- Mushrooms
- Jalapenos
- Minced dill and basil
- Garlic Salt
- Pepper
- Olive Oil 1 Tbl spoon
Instructions
