So you came to my site because you want the Best Roast Beef Sliders with Caramelized Onions and Mushrooms.  I had some leftover roast beef and wanted something quick and tasty to make for my family.  I know the title says to take to a party, and yes this would be a great party food or tailgate food, but it’s also perfect for a family meal.  We eat sliders often at our house.  Sometimes as simple as ham and cheese, and other times a little more meat loving with steak and cheese.  I was inspired to make these when a couple of nights before I made cheeseburgers with grilled onions and mushrooms.  The flavor was so amazing!  I thought, why not try it with the leftover roast beef and Hawaiian Rolls?  Let me tell you, this was the best, most flavorful sliders I’ve ever made!  The great part, I found a new way to use leftover roast beef!  Every time I make a roast, we have leftovers and sometimes I struggle to find something new and delicious to come up with.  The next day my husband and I fought over the leftovers, and he usually does not like leftovers.  You can purchase the worlds best kitchen products to help you out in the kitchen while you make this or any other recipe.

Start by sauteing your onions and mushrooms in butter until golden brown on medium heat.

Slice your Hawaiian rolls in half.  I usually divide my buns in half, then slice down the middle of each half.  Next, you will lay the bottom half of your buns in your 9″x13″ baking pan.  You can use the sweet rolls or butter rolls.  We used sweet, but I’m sure butter would be great too!

Next, you will spread 3 cups of chopped roast beef over the bottom half of the buns.  If you are buying deli roast beef, I would suggest using 1 pound of sliced roast beef.

Your next layer will be your caramelized onions and mushrooms.  If you have children who do not like onions and mushrooms, leave a few of the buns without this layer.

Now it’s time to add slices of sharp cheddar cheese.  You can also add shredded sharp cheddar cheese.  I prefer to buy cheese by the block because it melts better, and tastes better!  Use what you have available!

Place the top half of your buns over the delicious center of your sliders.  You will then pour the melted butter mixture over the buns.  I used a basting brush to brush the butter over the buns more evenly.  Bake in the oven at 350 for 20-30 minutes.

Total Time 40 minutes

Ingredients
  

  • 1 package Hawaiian Sweet Rolls 12 rolls
  • 3 cups of chopped left over roast beef or 1 lb of deli sliced roast beef
  • 2 T of olive oil or butter
  • 8 oz Sharp Cheddar cheese sliced. Or shredded sharp Cheddar cheese.
  • 1 Pint of sliced mushrroms
  • 1 white onion
  • Butter Topping
  • 4 T butter melted
  • 1 tsp Dijon Mustard
  • 1 tsp Worcesteshire Sauce
  • 1 tsp brown sugar

Instructions
 

  • Preheat overn to 350.
  • Slice sweet rolls in half with a large serrated knife. You will have a top bun section and a bottom bun section, keeping the buns connected (don't pull each bun apart). Set the bottom section in an 8x13" casserole dish sprayed with cooking spray
  • Heat olive oil on stove in medium to large skillet over medium heat, add chopped onions and sliced mushrooms. Cook until golden brown and caramelized.
  • Evenly place the chopped roast beef across the bottom layer of buns
  • Add your onions and mushrooms as the second later.
  • Next, add the cheese and then cover with the top half of buns.
  • Melt 4 Tablespoons of butter in microwave in a small bowl, add mustard, worcesteshire sauch and brown sugar. Mix well, then pour over the sliders. You can use a basting brush or spatula to spread it more evenly.
  • Place in oven and cook for 10-15 mintues covered with foil. Cook an additional 10 minutes uncovered. Checking to make sure they are not bruning on the top.
