Since we raise chickens, we always have plenty of fresh eggs, so I’m always trying to create recipes to use them up.  The easier the better!  These breakfast burritos are easy and delicious!  Not your ordinary breakfast burrito.  Everyone in my family will eat these, even my 5-year-old.  I don’t put onions on her burrito though.  This will easily make 4 overstuffed breakfast burritos.  If you need to make more, just double your recipe or add more eggs.  I usually make these on the weekend and sometimes I will add extra eggs so I can have leftovers for the following week.  These will reheat well.  I like to buy blocks of cheese and shred it (or slice it) myself.  To me, it tastes so much better than the pre-shredded packaged stuff.  To make this recipe easier, you can use the pre-shredded cheese.

How to Rock Breakfast Burritos the Easy Way

Ingredients
  

  • 4 eggs
  • 1/4 cup milk
  • 1/2 pound sausage
  • 2 cups frozen hash browns
  • 1 Tblsp butter
  • 20 cherry tomatoes or any tomato you have on hand diced
  • 2 green onions diced
  • salt and pepper to taste.
  • 4 flour tortillas
  • 1 Cup shredded sharp cheddar cheese
  • Salsa optional

Instructions
 

  • Cook your sausage over medium heat in your preferred skillet until done.
  • Remove sausage and place on plate.
  • In a medium bowl mix your eggs and milk with a whisk or fork.
  • Melt the butter in your skillet, add the egg mixture. Cook your eggs over medium heat in your skillet, stirring until done. Add salt and pepper, then move to plate with the sausage.
  • Cook your hash browns according to package directions. (if you don't mind the dirty dishes, you can start your hash browns in a separate skillet when you start your sausage.)
  • Once your hash browns are cooked, put your sausage and eggs in the skillet and mix all of your ingredients together.
  • Soften your tortillas in the microwave for about 20 seconds.
  • Place your sausage, egg, and hash brown mixture on your tortillas. Add tomatoes, green onions and cheese. Add salsa if desired. Wrap tortillas into burritos, and enjoy.

Conclusion

Do you love breakfast burritos?  Do you make your own, or order them when you are eating out?  My favorite breakfast burrito is Sonic’s, Super Sonic Breakfast Burrito.  It is so delicious and filling.  I’m kind of glad we don’t have a Sonic in my small town because I would be tempted to get one every morning! Luckily I have my own recipe, and it is a lot cheaper than eating out!
